Ingredients
- Idaho Spuds (dehydrated hash browns from Costco)
- ¾ cup boiling water
- Avocado oil
- ½ tbsp butter
Equipment
- Stainless steel pan
- Bowl
- Plate + paper towel
Instructions
- Put ¾ cup Idaho Spuds into a bowl
- Add ¾ cup boiling water
- Cover with a plate
- Let sit for 10 minutes
- Transfer to a plate lined with paper towel to dry
- Meanwhile, preheat stainless steel pan on medium
- Add avocado oil, let it heat up (don't let it smoke)
- Drop in the hash browns, flatten them out
- Reduce heat to medium-low (stay below smoke point - should steam, not smoke)
- Add ½ tbsp butter in pieces spread over the top, let it melt down
- Leave for 4-5 minutes (smell to make sure not burning)
- Flip in 1-5 pieces (depending on how stuck) - want crispy, not burnt
- Cook another 4-5 minutes
- Serve

- Get Idaho Spuds from Costco
- Watch the heat - steam is good, smoke is too hot
