prep 5 min cook 20 min Broiled Salmon, Grilled Salmon

Ingredients

  • 2 salmon fillets
  • Olive oil
  • Kosher salt
  • Stone ground mustard, to taste (optional)
  • Honey or maple syrup, to taste (optional)
  • 1 lemon (optional)

Equipment

  • Oven or grill
  • Sheet pan or grill basket
  • Small bowl (for the topping)

Instructions

  1. Rub the salmon with olive oil and season with salt.
  2. Cook at 425°F, or on the grill, until it is about half cooked.
  3. Broil to brown it.
  4. Optional topping: mix stone ground mustard with honey or maple syrup, spoon it over the salmon after broiling, and let it melt in with the heat off but the fish still in the oven.
  5. Other times skip the topping and just squeeze fresh lemon over it.

Notes

  • Two ways to finish, both after the broil: mustard + honey or maple, or nothing but fresh lemon.
  • The topping goes on with the oven off. The residual heat melts it in without cooking the mustard.
  • Works at 425°F in the oven or on the grill.
